After the planting of the first vineyards in 2004, eleven years later, in 2015, a modernly equipped technological base was built and began to function in the immediate vicinity of the vineyards – our winery. Its capacity allows the processing of about 250 tons of grapes and 500,000 liters of wine.
Part of the technological equipment in the winery is manufactured in Italy. The stainless steel vessels for fermentation, vinification and wine storage are Bulgarian-made and specially designed for our purposes. The production process is automated, with the ability to monitor and control the indicators in real time.
Below ground level, rooms have been built for aging the wine in oak French and Bulgarian barrels, with varying degrees of barrel roasting and a combination of different types of oak.
The winery has an innovative nitrogen production installation, applicable in all steps of winemaking to protect against oxidative processes, without the addition of sulfites, for the production of pure wines.
